Mexican Vegetarian Pizza

Ingredients
  

For the Pizza Dough

  • 1 Pizza dough ball (store-bought or homemade)
  • Cornmeal or flour for dusting

For the Pizza Sauce

  • 1 cup Tomato sauce
  • 1 tbsp Chili powder
  • ½ tbsp Cumin
  • ½ tbsp Paprika
  • Salt and pepper to taste

For the Toppings

  • 1 cup Shredded Mexican cheese blend (or a mix of cheddar and Monterey Jack)
  • ½ cup Black beans, drained and rinsed
  • ½ cup Corn kernels (fresh, canned, or frozen)
  • ½ cup Red or green bell peppers, thinly sliced
  • ½ cup Red onion, thinly sliced
  • ¼ cup Sliced black olives
  • 1 Jalapeño pepper, thinly sliced (adjust to your spice preference)
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

Notes

Preheat the Oven

  • Preheat your oven to the highest temperature it can reach (usually around 475-500°F or 245-260°C). If you have a pizza stone, place it in the oven as it preheats.

Prepare the Pizza Dough

  • Dust a clean surface with flour or cornmeal and roll out the pizza dough into your desired shape (round or rectangular). Make sure it's thin for a crispy crust.

Make the Pizza Sauce

  • In a small saucepan, combine the tomato sauce, chili powder, cumin, paprika, salt, and pepper. Simmer over low heat for a few minutes to let the flavors meld together.

Assemble the Pizza

  • Place the rolled-out dough onto a pizza peel or an inverted baking sheet dusted with cornmeal or flour to prevent sticking.
  • Spread the tomato sauce evenly over the dough, leaving a small border for the crust.
  • Sprinkle half of the shredded cheese over the sauce.
  • Distribute the black beans, corn, bell peppers, red onion, black olives, and jalapeño slices evenly on top.
  • Finish with the remaining shredded cheese.

Bake the Pizza

  • If you're using a pizza stone, carefully slide the pizza onto the hot stone in the preheated oven. Otherwise, place the baking sheet directly in the oven.
  • Bake for about 10-12 minutes, or until the crust is golden brown, and the cheese is bubbly and slightly browned.

Garnish and Serve

  • Remove the pizza from the oven and let it cool for a minute or two.
  • Sprinkle fresh cilantro leaves over the hot pizza.
  • Serve slices of Mexican vegetarian pizza with lime wedges for an extra burst of flavor. Squeezing fresh lime juice over the pizza adds a delightful zing.
