For the Veggie Patty
- 15 ounces Black beans, drained and rinsed
- 1 cup Cooked quinoa
- 1/2 cup Finely chopped mushrooms
- 1/2 cup Grated carrots
- 1/4 cup Finely chopped onion
- 2 cloves Garlic, minced
- 1/4 cup Breadcrumbs (or oat flour for a gluten-free option)
- 1 tbsp Chili Powder
- 1/2 tbsp Cumin
- Salt and pepper to taste
For Assembling the Burger
- Burger buns
- Lettuce leaves
- Sliced tomatoes
- Sliced onions
- Pickles
- Condiments of your choice (ketchup, mustard, mayo, etc.)
Prepare the Veggie Patty:
- In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, finely chopped mushrooms, grated carrots, minced garlic, finely chopped onion, breadcrumbs (or oat flour), chili powder, cumin, salt, and pepper to the mashed beans. Mix everything thoroughly until well combined.
Shape the Veggie Patties:
- Divide the mixture into equal portions and shape them into patties, about the size of your burger buns. Ensure they are compact and hold together well.
Cook the Veggie Patties:
- Heat a skillet or grill pan over medium-high heat and lightly grease it with cooking oil.
- Cook the veggie patties for about 4-5 minutes on each side or until they develop a golden-brown crust and are heated through. You can also grill them on an outdoor grill.
Toast the Burger Buns:
- While the patties are cooking, you can toast the burger buns on the grill or in a toaster until they are lightly golden.
Assemble the Veggie Burger:
- Place a lettuce leaf on the bottom half of each bun.
- Add the cooked veggie patty on top of the lettuce.
- Top with sliced tomatoes, onions, and pickles.
- Add your preferred condiments (ketchup, mustard, mayo, etc.).
- Finish with the top half of the bun.
Serve and Enjoy:
